MODE OF CULTIVATION:
Strict pruning, natural grassing
Green harvesting if necessary, sorting of the harvest
Long maceration of each grape variety in open vats.
Each plot and each grape variety is followed separately for a 12-month ageing in new oak barrels. The wine is aged for 1 to 2 wines.
Purple colour, deep and brilliant. Complex nose with aromas of black fruits, coffee, mocha and spices (black pepper). Rich and velvety on the palate, a modern wine with smoky notes.
FOOD AND WINE PAIRING:
Serve with local dishes, duck breast, game on the spit but also with a leg of lamb or a nice piece of meat.
16 to 18°C. Decant 1 to 2 hours before serving. Cellaring potential: 8 to 10 years.
